Everybody likes pizza, no? However, as I remember it, there’s always been the hunt for the perfect dough recipe. Search no more, here it is, courtesy of my lovely Wife! I should say that this makes a very European pizza, i.e. very thin, crusty dough and no big crusts to throw away. Also, I’ve never tried this as a ‘regular’ pizza with tomato sauce, but always made it as a white pie.

Where I live now people make a big fuzz about something they call ‘apizza’, which apparently justifies letting customers wait for 2h outside and then another hour inside until you maybe – maybe – get the pizza you ordered. I’m sorry, but I prefer my pizza without attitude.

So, here goes:

¼ tbs dry yeast
1 cup warm water
3 cup flour
¾ tsp salt
2 tbs olive oil

1 bag of shredded cheese
whatever else the fuck you want! This is America!

  1. Mix all ingredients until smooth
  2. let rise for 45 min
  3. divide dough and knead out flat
  4. preheat oven 400º F
  5. cover with more olive oil
  6. add cheese
  7. add toppings as desired (shredded garlic, mushrooms, thinly sliced potatoes, etc…)
  8. bake for 20-30 min

Makes two pizzas.
